Courgette Carrot Bites
Are you struggling with getting your little one to eat their vegetables? Try these courgette carrot bites that are made using only 6 ingredients. These were an instant hit with Maxwell and she didn’t even notice the courgette or carrot. They are the perfect snack to pack into the lunchbox or have after school. Feel free to add in some rosemary, mixed herbs or lemon zest.
Make these ahead of time, freeze them and re heat them in the microwave or oven. Enjoy x
1 cup grated courgette/zucchini (approx 1 large)
1/2 cup grated carrot
1/2 cup grated cheddar cheese
5 tablespoons flour
2 free-range eggs
Preheat the oven to 180 degrees on fan bake. Line an oven tray with baking paper.
Place the courgette and carrot into a clean tea towel, and squeeze out all the excess liquid.
In a bowl combine all of the ingredients. Form 1/2 tablespoon balls and flatten into rounds onto the baking sheet (I used a mason jar lid to make them easier to shape). Bake for 13-15 minutes or until they begin to golden.
