Tomato & Basil Pizza
1 cup spelt flour
½ cup almond flour
½ tablespoon extra-virgin olive oil
½ cup water
a pinch of salt
½ cup tomato paste
¼ cup grated mozzarella
1 cup cherry tomato’s, halved
¼ cup fresh basil
1/4 red onion, diced
Preheat the oven to 180 degrees fan bake. Line an oven tray with baking paper.
In a mixing bowl, combine the spelt flour, almond flour, olive oil, and salt. Mix well until combined. Add the water and mix until a dough is formed, and roll into a ball. The dough should be soft. If the mixture seems too wet, add more spelt flour. Transfer the dough onto a lightly floured surface and knead for 5 minutes. Shape into a circle and place onto the oven tray.
Place into the oven and bake for 10 minutes.
Remove the base from the oven and cover with the tomato paste, mozzarella, cherry tomato’s, basil and red onion. Cook for 10 minutes or until golden.
Home made pizza can be quicker than take away, and it's usually a whole lot more nourishing because you can control everything that goes into it. This pizza has a thin crispy base that is made from spelt and almond flour, topped with a tomato paste and covered in cherry tomato's, mozzarella cheese, fresh basil and diced onion. The roasted cherry tomato's are the stars here, they are succulent and juicy and give the pizza added flavour. Enjoy this light pizza, and add toppings to your hearts desire.
