This is a crumble of dreams, warm and buttery combined with sweet juicy strawberries and a crisp crumble topping. This is my go-to dessert when I need to whip up something at the last minute, and it is a favourite summer recipe. Serve with ice cream or yogurt.

2 1/2 cups strawberries, diced
1 cup rolled oats
¾ cup whole wheat flour
¼ cup brown sugar or coconut sugar
¼ teaspoon fresh ginger, grated
1/3 cup butter or coconut oil, melted
Juice of 1 lemon


Preheat the oven to 180 degrees and line a 20cm x 20cm dish with baking paper.
Combine the oats, flour, sugar, ginger and a pinch of salt. Mix in the melted butter or coconut oil. 
Place half of the mixture into the dish and press down to make sure all the base is covered. Add the strawberries and then put in the remainder of the mixture.
Drizzle with lemon juice and bake for 35-40 minutes or until the crumble is golden. Allow to cool before serving.
