Easy Chicken San Choy Bao
San Choy Bao is one of my favourite Chinese dishes. It is a mixture of minced or finely chopped meat, wrapped in crisp iceberg lettuce. These are flavourful enough to suit the adults and fun enough to get the kids tucking in. If you love asian food you will absolutely adore this delicious and easy recipe. It’s the perfect dish for something a little bit different.
Feel free to add fresh chili for some spice.
500 gram chicken mince
8 lettuce cups
1 small carrot, grated
1 small brown onion
1 spring onion, chopped
2 garlic cloves, minced
1 teaspoon grated ginger
6 tablespoons tamari
1/4 cup coriander, roughly chopped
1 tablespoon olive oil
Heat oil in a frypan over medium heat, add onion, garlic and ginger for 3 minutes. Add the chicken, break it up. Once the chicken is cooked through, add the carrot and tamari. Turn heat right down and let simmer for 3 minutes. Remove from heat and allow to cool before placing in lettuce cups.
Wash lettuce cups and place on plates. Using a tablespoon, spoon mixture into the lettuce cups and sprinkle with coriander and spring onion.
