Rice Bubble Bars
Here is a great recipe for a nutty slice that the kids will love as much as you do. Perfect for afternoon tea (as it contains nuts, so not suitable for school lunch boxes) and made with pantry cupboard staples. If you want to make these lunchbox friendly, simply take out the nut butter. These bars are the perfect alternative to the sugar-filled store bought varieties! They contain very little sugar and the nut butter adds some protein to give your little one extra energy. They take less than 10 minutes to make and require no baking.
1 1/2 cup brown rice bubbles or puffs
1/4 cup cocoa or cacao powder
4 tablespoons honey or maple syrup
1/2 cup almond or peanut butter
1/2 cup coconut oil, melted
Line a loaf pan with baking paper.
In a large bowl combine the cocoa powder, coconut oil, maple syrup or honey, nut butter and salt. Add in the brown rice bubbles and mix well.
Pour mixture into the loaf pan and smooth it out.
Place into the freezer for 1 hour to set. Once it has set, remove from the freezer and cut with a knife that has been run under warm water. Cut into squares and store in an airtight container in the freezer.
