Persimmon Fruit Salad

A bright and colourful Persimmon Fruit Salad that is perfect for the cooler weather. The flavours of the different fruits really complement each other and make a fabulous addition to your breakfast, lunch or dessert. The Persimmons make the salad creamy, the pomegranate add crunch and the kiwifruit and lime juice make it sweet and tangy. 

Persimmons are a bright orange fruit that look like a tomato, except they are actually a berry. This fruit is loaded with antioxidants, vitamin C fibre, magnesium and potassium. The high levels of vitamin C help to boost immunity, and magnesium helps to improve sleep quality, increase energy and calm nerves. Persimmons work well in both sweet and savoury dishes and make a delicious snack on their own. 3 Persimmon, chopped into small cubes
3 mandarin, peeled, separate segments
2 kiwifruit, peeled, chopped into small cubes
Seeds from 1 pomegranate
1 nashi pear, core removed and chopped into small cubes
1 lime 


In a large bowl, combine all the salad ingredients apart from the lime. 
Cut lime in half and squeeze the juice evenly over the salad. 
Salad is best served fresh. Store in the fridge.
