Pear & Walnut Salad
Pears are now in season and what better way to enjoy them than in a salad. This salad is made with with juicy pears, toasted walnuts, creamy feta and avocado, spicy rocket, and topped off with a tasty lemon and mustard dressing. Salads don't have to be boring, and this one is bursting with flavour, and nutrients. Enjoy it as a side or add some grilled chicken for a non-vegetarian option.
Soft and sweet, pears are a treat in themselves. They are loaded with vitamin C, anti-oxidant, and fibre. Make sure you eat the skin as it contains half the pear's fibre. 1 pear, core and stem removed, thinly sliced
2 cups rocket
2 cups baby spinach
1 avocado, thinly sliced
1 cup walnuts, halved
1/3 cup feta cheese, crumbled
1/3 cup pumpkin seeds
Juice of 1 lemon
1 teaspoon lemon zest
½ teaspoon dijon mustard
¼ teaspoon salt
¼ cup olive oil
To make the dressing, combine the lemon juice, lemon zest, mustard, salt and olive oil and stir until smooth. Put aside.
Heat a non-stick skillet over medium heat and add the walnuts. Stir frequently for 5 minutes or until the walnuts have become crispy. Put aside to cool.
In a large bowl, combine the pear, rocket, spinach, avocado, feta, pumpkin seeds and walnuts. Drizzle the dressing over and the salad and serve.
