Pear & Cinnamon Loaf
It's that time of year when pears are in season. These tasty morsels are fabulous in many different desserts, but you just can't beat this recipe for Pear & Cinnamon Loaf. It can be enjoyed for breakfast, a snack or dessert. This loaf smells heavenly when it bakes, filling the room with scents of cinnamon. Serve with a layer of butter or a dollop of whipped cream. Thank me later!

1 pear, chopped into small cubes (preferably a soft pear)
1 ½ cups whole wheat flour
2 free range eggs
½ cup maple syrup
½ cup milk of choice
1/3 cup butter, melted
¼ cup greek yogurt
2 tablespoons walnuts
1 teaspoon cinnamon
1 teaspoon baking powder
Pinch of salt
Pre heat the oven to 180 degrees celsius fan bake – line a loaf pan with baking paper.
In a bowl, beat the eggs, then add the milk, butter and maple syrup. Mix well.
Add the pear, yogurt, baking soda, cinnamon, and salt, mix well. Add the flour and mix well.
Pour the batter into the loaf pan, top with the walnuts and bake in the oven for 35-40 minutes. To make sure it is cooked through place a knife or toothpick into the cake before removing from oven. If the knife or toothpick comes out clean, it is ready!
Let the bread cool on a wire rack before serving. Is best served warm and crispy from the toaster with butter.
