Peanut Butter & Oat Cookies

Peanut Butter, oats and chocolate make the perfect combination. These cookies are chewy on the inside and crispy on the outside. They can be made in 20 minutes, and are a nice treat to have when wanting something sweet. It was hard to not eat them all at once! If you’re a peanut butter lover like me, you’ll love this recipe.

Ingredients

1 1/2 cups rolled oats
1/2 cup peanut butter
1/4 cup gluten free flour
1 free-range egg
2 tablespoons olive oil
2 tablespoons almond milk
3 tablespoons coconut sugar
1/2 teaspoon baking soda
1/2 cup dark chocolate chips

Method

Preheat the oven to 180 celsius and line a baking tray with non-stick paper. 
In a large bowl, mix all the ingredients apart from the dark chocolate together until well combined. 

Scoop tablespoon sized balls onto the baking sheet. slightly flatten. Place into the oven and bake for 10 minutes or until slightly golden.
Transfer to a wire rack. Melt the dark chocolate and drizzle over the cookies. 
Store in an airtight container.
