Stuffed Medjool Dates

Whenever I'm feeling like a sweet treat, I always dip medjool dates in peanut butter. I decided to go a step further and combine medjool dates, peanut butter AND chocolate. These stuffed medjool dates will melt in your mouth. Almond butter can replace the peanut butter and other toppings that can be used are nuts and seeds, coconut, and goji berries. Enjoy, Lx

Yields

8 medjool dates


Ingredients

8 medjool dates
1/2 cup dark chocolate, melted
1/2 cup peanut butter (can use almond butter)
Toppings
1/4 cup freeze dried raspberries
1/4 teaspoon salt
 

Method

If the medjool dates haven't been in the fridge, chill them for 30 minutes before using.  
Once they are cold, slice them down the middle and remove the pip.
Line a tray with non stick paper. Place a spoonful of peanut butter in the middle and close. 
Dip each date in melted chocolate and place on the tray. 
Cover the dates in your choice of toppings and place in the freezer for 30 minutes before eating.
Store dates in an air tight container in the fridge.
