Mandarin & Almond Salad with Orange dressing

Who said salads had to be boring? This Mandarin & Almond salad with orange dressing is bursting with incredible, fresh flavours in every bite. I love the sweetness of the dressing combined with the crunchy almonds and creamy feta. Pair this light salad with chicken or fish.

Mandarins are the star of this recipe, not only because they give life to salads but because of their nutritional qualities. Mandarins are rich in Vitamins A, B, and Vitamin C, a powerful antioxidant that boosts immunity, prevents infection and helps to improve skin health. If you're wanting more recipes that contain mandarins, check out the 5 a day NZ website, they have an amazing selection.
