Mandarin & Almond Salad with Orange dressing
Who said salads had to be boring? This Mandarin & Almond salad with orange dressing is bursting with incredible, fresh flavours in every bite. I love the sweetness of the dressing combined with the crunchy almonds and creamy feta. Pair this light salad with chicken or fish.

3 mandarins, peeled and separated into segments
3 cups baby spinach
1 large apple, core removed and thinly sliced
1 cup plain almonds
¾ cup dried cranberries
¾ cup crumbled feta
½ cup olive oil
Juice of 1 orange
Zest of 1 orange
1 tablespoon Dijon mustard
1 tablespoon honey
In a large bowl, combine the salad ingredients. In a small bowl, combine the dressing ingredients and stir until it begins to thicken. Pour the dressing over the salad and mix through to ensure it is covering all the ingredients. Enjoy.
