Bright and tangy Lemon Bars with a refreshing flavour and creamy filling. Lemon desserts are my favourite and I love these bars as they are simple to make and only use 6 ingredients. These bars are so perfect to make ahead of time or the night before you plan to serve them. Dust with icing sugar and serve with a dollop of cream or ice cream.
1 1/2 cups almond flour
1/4 cup coconut oil, melted
3 tablespoons of honey or maple syrup
1/8 teaspoon salt
4 free-range eggs
juice of 3 lemons
1/2 cup honey
3 tablespoons almond flour
*1 tablespoon Icing sugar (optional)
Pre heat the oven to 180 degrees celsius on fan bake. Line a loaf pan with baking paper.
To prepare the crust, mix the crust ingredients until it forms a dough. Roll into a ball and then press into the loaf pan. Bake the crust for 10 minutes.
While the crust is baking, prepare the filling.
In a bowl, whisk the eggs and then add the lemon juice, honey, and almond flour. Once the crust has finished baking, pour the filling into the loaf pan. Place back into the oven and bake for a further 20 minutes or until it starts to go crispy.
Remove from the oven and let it sit for 10 minutes. Remove from the loaf pan and place into the fridge for 1-2 hours before slicing and serving. Sprinkle with icing sugar and enjoy. Keep in an airtight container in the fridge.
