Kumara & Peanut Butter Rostis


These Kumara and Peanut Butter Rostis make the perfect vegetarian meal. The rostis are full of beautiful flavours from the garlic, ginger, orange zest, chilli and peanut butter. When baked in the oven they turn out golden and crispy. Serve with greek yogurt or avocado.

8 rostis


2 cups grated kumara
2 tablespoons peanut butter  
2 tablespoons tamari (can use soya sauce)
1 garlic clove - minced
1 free-range egg
1 teaspoon freshly grated ginger
1/2 teaspoon chilli flakes
zest of 1 orange
1/2 cup of coriander or parsley, chopped
1/2 cup gluten free flour


Preheat the oven to 180 celsius and line a baking tray with non-stick paper. 
In a large bowl, mix all the ingredients together until well combined. The mixture should be sticky, if not add a little bit of water and if it is too sticky add more flour. Roll the mixture into 8 balls and then flatten to make patties. Place onto the tray and bake for 20 minutes or until lightly golden.
Serve warm with a dollop of greek yogurt.
