Kumara Hash Browns
You’re in for a treat with these 4 ingredient kumara hash browns. A nourishing alternative to the traditional greasy hash browns. These can be served for breakfast, lunch or dinner or can be added to the lunchbox or enjoyed as an after school snack.
One medium kumara makes about 4 large sweet potato hash browns (pictured). I have used a large kumara when making these and added another tablespoon of oil to keep the same consistency.
Serve these hash browns with avocado, greek yogurt, salsa, a bed of greens or a poached egg. The options are endless.
1 medium kumara (sweet potato), washed, peeled and grated
3 tablespoons flour
1 1/2 tablespoons olive oil
Preheat the oven to 180 degrees on fan bake. Line an oven tray with baking paper.
In a bowl combine the kumara, flour, egg and olive oil. Using a mason jar lid shape each hash brown and place onto the tray. Bake for 20 minutes or until they turn golden and crispy.
