Homemade Twix Bar
This homemade twix bar is about as good as it gets. A buttery shortbread cookie base with a gooey caramel layer that is topped with chocolate. This bar, unlike the traditional Twix, is made with almond flour, peanut butter, coconut oil and maple syrup. This means they are gluten free, grain free, refined sugar free and vegan. These bars are heaven in your mouth and are sure to become a household favourite. I hope you love them as much as I do!
2 cups almond flour
1/3 cup coconut oil, melted
3 tablespoons maple syrup (can use honey)
1/2 teaspoon cinnamon
1/2 cup peanut butter (can use any nut butter)
1/4 cup coconut oil, melted
1/4 cup maple syrup (can use honey)
4 tablespoons gluten free flour (can use normal flour)
100 grams dark chocolate
Preheat the oven to 180 degrees on fan bake. Line a loaf pan with baking paper.
In a bowl combine the base ingredients and evenly press dough into the loaf pan. Bake for 15-20 minutes or until it starts to turn golden. Remove from the oven and let it cool for 20 minutes.
In a medium bowl, combine the filling ingredients until smooth. Pour the filling over the base and place in the freezer for 1 hour.
In a small saucepan, melt the chocolate for the top layer over low heat. Once melted, pour over the filling and place back into the freezer for 1 hour. Cut into slices before serving and store in the freezer in an airtight container.
