Crispy Hasselback Potatoes
Hasselback potatoes are my new favourite way to have a baked potato. They are the perfect side dish for people who love crispy chips as well as the fluffiness of a baked potato. These potatoes are tender and buttery on the inside and crispy on the outside. Other garnishes that can be added are paprika and bacon
6 medium sized potatoes
3 garlic cloves, minced
4 tablespoons olive oil
1 tablespoon butter,melted
1/4 teaspoon himalayan salt
Pinch of pepper
1/4 cup parmesan cheese
1/4 cup parsley, finely chopped
Preheat the oven to 180 degrees, fan bake.
Wash the potatoes and place slices through them (as pictured). Don't cut all the way through.
In a bowl, mix the garlic, olive oil, butter, salt + pepper.
Place the potatoes in a baking tray and drizzle the dressing over them. After 30 minutes, sprinkle parmesan cheese and parsley over the potatoes, place back into the oven.
Bake the potatoes for 40 minutes or until golden and crispy.
Best served warm.
