Courgette Noodle Bolognese

Swap pasta for courgette noodles and serve with a delicious homemade bolognese sauce for an easy weeknight dinner that can be made in just 35 minutes. This family favourite is packed with an array of veggies to boost the nutrient content and served with courgette noodles to keep it gluten free. This is a hearty meal that your family will love during the colder evenings.

Ingredients:

2  tablespoons  olive  oil  
1 brown onion, finely sliced  
3 garlic cloves,  minced  
500 grams  organic  mince beef  
4 medium  courgettes, spiralised  
2x 400 gram tins of  chopped  tomatoes  
1 cup button mushrooms, sliced  
1  small  fresh chili, de seeded and diced  
½ cup  pecans  (optional)
½ cup pumpkin seeds  
1 cup fresh coriander, chopped  finely  
Salt and pepper  

Method: 

In a large pan, place on medium heat and add 1 tablespoon of olive oil. Once heated, add the garlic and onions and  brown for 3 minutes.    

Add the mince and cook  for 5 minutes or until it has browned.    Place the tinned tomatoes, mushrooms and chili into  the pan and cook for 7  minutes  stirring occasionally.   

Warm a pan on medium heat,  add 1 tablespoon of oil and place the spiralized courgettes into pan. Season with salt and pepper and  cook for 10 minutes.    

Once the courgette noodles are cooked, place into a big bowl or separate plates. Add the  bolognese  sauce  on top and sprinkle with the coriander,  pecans  and pumpkin seeds.
