Coconut Chocolate Bars
Coconut Chocolate Bars are vegan, gluten free and require no baking. They are easy to make, with only 5 ingredients and ready in less than 10 minutes. Use nuts and nut butter of choice and feel free to add in dried fruit or extra chocolate. If you’re craving chocolate or something sweet, these coconut chocolate bars are perfect for you. This is a treat that will satisfy your sweet tooth and can be made in no time.
The bars must be stored in the fridge, as the coconut oil and butter will melt at room temperature.
1 cup nut butter (I used peanut butter)
1 cup dark chocolate chips (I used 70% dark chocolate to make them vegan)
1/2 cup coconut oil
1 1/2 cups shredded coconut
1 1/2 cups nuts (I used a mixture of cashews and peanuts)
Line a 20 x 20 cm oven tray with baking paper.
In a sauce pan over low heat, melt the nut butter, chocolate chips and coconut oil. Once it has melted, remove from the heat and stir in the shredded coconut and nuts.
Pour mixture into the oven tray and refrigerate for 3 hours before serving. Slice into squares and store in an airtight container in the fridge.
