Chocolate Chunk Cookies


Deliciously soft, chewy, gooey, almond flour chocolate chip cookies with chocolate in every bite. These gluten-free cookies that require just a few ingredients (that’s my kind of recipe) and contain my favorite flavours: chocolate and almond.

For chewiest cookies, enjoy these warm from the oven. If you prefer them a bit crisp, wait until they've cooled before biting into one. After baking these homemade cookies you’ll never ever go back to store bought cookies! Use dark chocolate to make these cookies dairy free.

2 cups almond flour
1 egg
1/3 cup nut butter (I used almond butter)
1/3 cup coconut sugar
1/4 cup coconut oil, melted
1/4 teaspoon baking soda
1/4 teaspoon salt
100 grams chocolate


Pre heat oven to 180 degrees on fan bake and line an oven tray with baking paper.
In a bowl, mix the almond flour, baking soda and salt. In a separate bowl mix the coconut oil, nut butter, egg and coconut sugar. Pour the wet mixture in with the dry mixture and combine. Roughly chop half of the bar of chocolate, mix this in with the cookie dough.
Using a tablespoon, scoop out mixture and roll into a ball. Place onto the oven tray and flatten. Roughly chop the remainder of the chocolate and press the chocolate into the cookies. Bake for 10-15 minutes or until the cookies begin to turn crispy and brown. Store cookie in a airtight container in the pantry.
