This chocolate bark will melt in your mouth and can be enjoyed in minutes. It is one of my favourite treats to make when I'm wanting something sweet. It is hard to stop at one piece! This recipe only requires 4 ingredients and it is gluten free and vegan. I topped mine with pumpkin seeds, freeze dried raspberries and goji berries. Other toppings include peanut butter, shredded coconut and mixed nuts and seeds.
1 cup dark chocolate (I use 70% dark chocolate to make it vegan)
1/4 cup pumpkin seeds
1/4 cup freeze dried raspberries, crushed
1/4 cup goji berries
Line a baking tray with non-stick paper.
Melt the chocolate and pour onto the non-stick paper. Spread the chocolate using a spoon. You want the chocolate to be around 20cm x 20cm and 1/2 cm thick. Sprinkle with toppings.
Place into the freezer for 30 minutes or until firm.
Break into pieces and serve. Store in an air tight container in the freezer.
