Chocolate Almond Bites
Recently I've been trying extra hard to cut out as much refined sugar from my diet. But, sometimes you just need chocolate which is why these bites are the perfect little treat. These make a REALLY great pick me up snack during the day or while at work. I take just a two of them with me in a bag (otherwise, I would eat 10) and eat one or two during the day when I just want a little something.
I used milk chocolate but feel free to use dark chocolate or a dollop of nut butter.
2 1/2 cups almond flour
3 tablespoons maple syrup
2 tablespoons coconut oil, melted
40 grams chocolate
1 teaspoon cinnamon
Pre heat the oven to 180 degrees fan bake and line an oven tray with baking paper.
In a bowl, combine the almond flour, maple syrup, coconut oil, and cinnamon.
Using a teaspoon, scoop out the mixture and roll into balls. Place onto the oven tray and then flatten. Using your thumb, make a groove in the middle of each cookie.
Place in the oven and bake for 10 minutes. Remove from the oven and place a square of chocolate into each groove. Bake for another 5 minutes. Remove from the oven and place onto a wire rack. Sprinkle with salt.
