These Cauliflower Fritters are easy to make and a different way to have cauliflower. They are crispy, chewy, delicious and tasty. I've made these a number of times for my family and friends and everyone loves them. These fritters are a great way to get the little ones to enjoy their vegetables.
Cauliflower is rather neutral in flavour and mashes up nicely to a soft texture so you really have no idea there is cauliflower in these patties. What I love about these Cauliflower Fritters is that the batter can be made earlier in the day and the fritters made just before you are ready to eat. Feel free to get creative with the toppings, I sometimes sprinkle some parmesan and parsley over the fritters.
1 cauliflower, cut into florets
2 free-range eggs
1 1/2 cups whole wheat flour
1/4 cup green onion, finely sliced
3 cloves garlic, minced
Greek yogurt or sour cream

Steam the cauliflower in 2 1/2 cups water over medium heat until tender, about 5 to 6 minutes. Drain and quickly rinse under cold water to stop it from cooking.
Once it has cooled down, place the cauliflower into a food processor and pulse into it becomes fine. If you do not have a food processor, chop into small pieces. You need approx 4 cups of finely chopped cauliflower.
In a large bowl, combine the cauliflower, eggs, whole wheat flour, green onion, garlic and salt + pepper. The batter should be dense, if it is quite wet, add some more flour to thicken it up.
Heat a large non-stick pan over medium heat. Add a tablespoon of olive oil. Using a tablespoon, scoop out some of the batter and place onto the fry pan. You should be able to cook 4 fritters at once. Cook until golden brown, about 2 1/2 to 3 minutes on each side. Repeat with the remaining oil and batter. It should make 10 fritters.
Serve warm with toppings of your choice.
