These Carrot Fritters make the perfect vegetarian meal. The bright fritters are full of beautiful flavours from the cumin, garlic, parsley and lime. Serve with a salad or as a snack. Kids love these and its a great way to sneak some vegetables into their meal. Easy to make and even easier to eat.

Carrots are a rich source of vitamin A which comes from beta-carotene, it is converted into vitamin A in your liver. Eating foods rich in beta carotene can help to improve eye sight. Carrots are also packed with anti oxidants and vitamin C, these both help with skin health.

Ingredients

3 carrots, peeled, grated
3 eggs
2 green onions, finely sliced
2 teaspoons ground cumin
2 garlic cloves, crushed, finely sliced
½ cup Greek yogurt
¼ cup flour
¼ cup parsley, finely chopped
1 lime
1 tablespoon olive oil

Method

Beat the eggs in a large bowl. Add the green onion, cumin, garlic, flour, and parsley. Mix well to combine.

Place the grated carrot onto a clean tea towel and squeeze the excess water out. You want to try and get as much water out as possible so the fritters stick together when cooking.Place the carrot into the bowl and mix well to combine.

Heat olive oil in a non-stick fry pan over medium heat. Using a tablespoon, spoon out the mixture and add to the fry pan. Cook the fritters for 3-4 minutes on each side or until golden. Serve fritters with Greek yogurt and a squeeze of lime juice.
