Brown Rice & Quinoa Summer Salad
A delicious and nutritious colourful rice salad that is bursting with summer flavours. The perfect salad to serve for lunch, as a side or to bring along to a BBQ. This is the kind of salad that tastes even better the next day after the flavours have had time to marinate. It is made using the SunRice Brown Rice & Quinoa, making it light and fluffy and high in protein. It also contains spinach, peas, almonds, cabbage, capsicum and is covered in a sweet chilli dressing.
2 cups SunRice Naturally Rice & Quinoa
2 cups baby spinach, roughly chopped
2 cups purple cabbage, roughly chopped
1 red capsicum, cubed
1 cup peas
4 spring onions, sliced
¾ cup almonds
Sweet Chilli Dressing:
2 tablespoons olive oil
2 tablespoons maple syrup or honey
3 tablespoons vinegar
½ teaspoon salt
½ teaspoon red chili flakes
juice of 1 lemon
Place SunRice Naturally Rice & Quinoa and 2 cups of water into a medium sized saucepan, bring to a boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. While the rice is cooking, prepare the dressing in a small bowl by mixing together the ingredients.
In a large bowl, add the brown rice and quinoa, salad ingredients, pour dressing over and gently toss to combine.
