Broccoli & Feta Fritters

Broccoli is a favourite staple in my house and I'm always trying to find new ways to include it in my diet.  These fritters are the perfect way to enjoy broccoli, even for non-broccoli fans. These fritters are creamy and soft on the inside and crunchy on the outside. Like most fritters, they taste best straight out of the frying pan. Drizzle fritters with lemon and top with a Greek yogurt. I served mine with grilled salmon and a leafy green salad, a perfect combination.
Enjoy these as a snack or include with your dinner for a meat free, high fibre meal.

Yields

8 fritters


Ingredients 

1 medium sized broccoli
3 free-range eggs
2 garlic cloves, minced
1/2 cup parsley, chopped
1/2 cup gluten free flour  (put an extra 1/4 grams aside incase mixture is too wet)
80 grams of feta cheese, crumbled
1 lemon
1 tablespoon olive oil
Salt + pepper
Topping
1/4 cup Greek Yogurt

Method

Firstly, steam broccoli, boil water in a pot and add the broccoli to the steamer basket. Steam for 5 minutes,  then place into a bowl and let cool. 
Once the broccoli has cooled, chop as finely as you can. 
Beat the eggs in a bowl, add the garlic, parsley, flour, feta, salt + pepper. Add the broccoli and combine well. The mixture should not be too wet, if it is, add some flour. 
Heat a large frying pan over medium heat and add the olive oil. 
Once the oil is hot, add a tablespoon of the mixture into the pan and flatten slightly. Cook for 2-3 minutes on each side or until lightly golden. 
Once cooked, transfer to a plate lined with a paper towel to soak up any oil. 
Drizzle with lemon juice before serving and top with greek yogurt.
