Asparagus, Strawberry and Rocket salad

Ingredients

2 bunches of asparagus, ends trimmed 

3 cups rocket 

2 cups fresh strawberries, stalk removed and sliced in half 

50 grams goats cheese, crumbled 

1 spring onion, chopped finely 

¼ cup sliced almonds

Dressing  

Juice from 1 lemon 

2 tablespoons olive oil 

1 tablespoon maple or honey 

salt + pepper 

Method

Bring a large pot of water to boil over medium heat. Add the asparagus to the boiling water and cook for 2 or 3 minutes. Drain the asparagus and let cool. 

In a large bowl, combine asparagus, rocket, strawberries, goats cheese, spring onion and almonds.  
In a small bowl, mix the lemon juice, olive oil, maple or honey and salt and pepper.  

Pour the dressing over the salad and toss lightly. Serve.

    One thing I look forward to in Summer are the recipes you can create with the seasonal fruit and vege, and this asparagus, strawberry and rocket salad uses some of my favourites. The combination of sweet and juicy strawberries with crunchy asparagus accompanied by goats cheese and spicy rocket is absolutely delicious. This recipe is the perfect side salad to meat and toasted sour dough or to enjoy on its own. 
    Asparagus is a vegetable power house that has an array of vitamins, anti-oxidants and fibre. The fibre helps to move food through the gut and prevent discomfort around digestion. It is also high in water, which helps prevent constipation and work as a diuretic to help flush out excess water and relieve bloating. Asparagus is also a pre biotic which helps to nourish the good bacteria in the gut and create a balance between the good and bad bacteria.
