Asian Pear Salad
A refreshing, tangy and crispy Asian Pear Salad that is topped with a citrus dressing. Nashi Pears are now in season and what better way to enjoy them than in a salad. This salad is made with juicy pears, sweet oranges, crunchy capsicum, and edamame. Salads don't have to be boring, and this one is bursting with flavour, and nutrients.Serve this salad alongside chicken or grilled salmon.
Soft and sweet, Nashi pears are a treat in themselves. They are loaded with vitamin C, anti-oxidant, and fibre. Make sure you eat the skin as it contains half the pear's fibre. 1 nashi pear, cut into match sticks
1 ½ cups red cabbage, thinly sliced
1 red capsicum, core removed, thinly sliced
1 cup cucumber, cut in half & thinly sliced
1 orange, peeled and separated into segments
1 carrot, cut into matchsticks or julienne
¾ cup edamame, shelled
½ cup coriander, finely sliced
Zest of 1 orange
Juice of 1 orange
3 tablespoons white vinegar
1 tablespoon olive oil
1 teaspoon fresh ginger, grated
¼ teaspoon salt
In a large bowl, combine all the salad ingredients.
In a small bowl, combine the dressing ingredients and whisk until it thickens. Pour the dressing over the salad.
