One Pan Mushroom Breakfast


Morning's can be frantic and the thought of cooking a time consuming meal is laughable to me. I'm either an overnight oats, chia pudding, peanut butter and banana on toast or quick eggs girl.  This One Pan Mushroom Breakfast is made in less than 15 minutes and will keep you feeling full for hours.  If you exercise in the morning I highly recommend eating a protein rich meal and this one is perfect. It contains protein from the eggs and mushrooms, healthy fats from the avocado and greens from the rocket. It's the perfect breakfast dish in my opinion.  This serves 2 so if you are cooking for yourself just half the recipe. 1 tbs extra virgin olive oil
150 grams button mushrooms
salt and pepper to season
4 free range eggs
large handful rocket
1 avocado, mashed
Sourdough bread
optional: lemon juice

Heat the oil in a fry pan over medium heat. Add the mushroom, season with salt and pepper. Cook for 5-10 minutes.
Crack the eggs into the pan. Cook for 5 minutes or until your liking. Remove pan from heat and sprinkle with rocket.
Toast sourdough and spread with avocado. Drizzle with lemon juice if you wish.
