Spicy Beef & Quinoa Balls

500 grams grass fed minced beef

1 cup quinoa, cooked

1 brown onion, finely chopped

1/4 cup grated carrot

1 clove garlic, crushed

1 tablespoon tamari

1 teaspoon chili powder

1 teaspoon ground coriander

½ cup fresh parsley

1 organic egg


  1. Preheat the oven to 200 degrees celcius. Line a baking tray with with baking paper; set aside.
  2. Cook quinoa in a pot over the stove on medium heat with 3 cups of water for 10 to 15 minutes or until water has evaporated. Transfer to a sieve to allow any excess water to drain out.
  3. In a large bowl, mix together all ingredients until well combined. Shape into balls and place on the baking tray. Cook in the oven for 20 minutes.
  4. Serve with salad greens

Beef is one of the best sources of iron on the planet, and is also high in protein. These spicy beef and quinoa balls are full of vegetables plus fibre from the quinoa, so can be eaten alone, or you can add a salad for extra nutritional value. In winter you can pair the meatballs with a warmed home made tomato sauce and spaghetti.
