Cacao Snow Balls


I think that I have finally mastered a recipe to help me curb my (refined) sugar cravings!  Anyone who knows me knows that I have the biggest sweet tooth.  A king size block of chocolate is no hard task and can be consumed in as little as fifteen minutes.  It's a terrible habit that I have been working really hard on changing and can happily say that over the past 6 to 8 months I don't crave sugar as much as I used to.  There are the odd days that I will look into the pantry and hope that a lindt ball or sour worm will fall into my mouth, but let's be honest, the feeling we all feel after a sugar binge isn't so nice and it's not really worth it. Libby has posted a recipe for Bliss Balls before which are also great for a little snack but I wanted to try something different so gathered nuts, seeds and dried fruit, threw it all in the food processor and created the most delicious treat!

Makes approx 25 balls


8 fresh medjool dates, pitted 1 cup walnuts 2/3 cup raw cacao powder 1/2 cup desiccated coconut 1/2 cup cashew nuts 1/4 cup sunflower seeds 1/4 cup cranberries 1/4 cup water pinch of salt 1/4 cup desiccated coconut for rolling

  1. Blend the walnuts, cashews, dates, sunflower seeds, cranberries and coconut in a food processor until all of the ingredients are combined.
  2. Add cacao powder, water and salt into food processor, the mixture will turn into a dough/paste. You may need to pulse a few times as it can stick.
  3. Clean out food processor and then blend the 1/4 cup desiccated coconut.
  4. Roll mixture into balls with your hands, roll through the blended coconut and place on baking/wax paper.  Pop into the fridge to set.

These can also be frozen.  Don't eat them all at once!
