Holy Moly Guacamole


I’ve been on a bit of an avocado binge lately.  I put avocado in my salad, on toast and my new favourite thing to do is make guacamole. There are 13 vitamins that the body absolutely needs: vitamins A, C, D, E, K and the B vitamins (thiamine, riboflavin, niacin, pantothenic acid, biotin, vitamin B-6, vitamin B-12 and folate).  Avocados naturally contain many of these vitamins. Avocados contain healthy fats and high levels of Omega 3 Fatty Acids which your brain needs. If you are pregnant avocados are great to add into your diet as they contain folate.  Folate promotes healthy cell and tissue development so you need lots of this during periods of rapid cell division and growth - pregnancy. The other night I made some guacamole for my parents as a pre dinner snack.  It only took about 10 minutes and all of the ingredients were in the fridge or fruit bowl which made things easier as I didn’t have to pop out to the store. This is what you will need: 1x avocado ½  tomato 1/3 red onion 1/3 capsicum 1 clove garlic ½ lemon Himalayan salt and Pepper (to season) Mix all of the ingredients together in a bowl.  *The avocado I used was really soft so could be mashed with a fork.  You can also use a kitchen whiz* Tortilla chips: A company called Tio Pablo make these amazing Gluten Free, Dairy Free, NZ made Corn Tortillas.  Tio Pablo have stockists around NZ and you can also buy online. Cut Tortilla into triangles. Place onto an oven tray (best to lay some non stick baking paper down first). Drizzle with a little Olive Oil Bake in the oven at 180 degrees C.  They should only take 10-12 minutes. Enjoy! Love J x
